SPICY CHICKEN [OIL FREE COOKING]

INGREDIENTS:

1. Chicken [1full ] approx.1 kg [after removing skin ,cut in small pieces]
2. Curd 2 cups [thick]
3. Onions 2 big [finely chopped]
4. Garlic [crushed] 3 tbs [can use paste also]
5. Ginger [crushed] 2 tbs [can use paste also]
6. Tomato 1 big [seeds removed and cut in small pieces]
7. Green chillis [chopped] 3
8. Bengali garam masala 1 tbs
9. Roasted jeera powder 1 tbs
10. Vinegar 2 tbs
11. Juice of 1 lime
12. Tandoori colour 1 tps [orange food colour powder]
[if liquid colour used ,then use a little more]
13. Cucumber 1 [peel and cut thin slices]
14. Capcicum 1 medium size [cut in tiny pieces, after removing the seeds]
15. Bengali bhaja masala 1 tbs
16. Red chilli podwer 1 tps
17. Salt and sugar to taste
18. Amchur powder 1 tps
19. Nutmeg powder 1 tps [optional]

METHOD:

Wash the chicken.
Put it in a big bowl and add curd, garlic ,ginger, food colour and all other dry masalas.
Add salt and sugar.
Add the lime juice and vineger also.
Mix well.
Cover and let it marinate for about half a day.
If climate, too hot,then keep it in the fridge.
Heat a heavy bottom non-stick kadhai.
Add the marinated chicken.
Cover and cook in low heat until water comes out of the chicken.
Open the lid,and now cook in medium heat ,stirring occassionally.
Let the water dry completely and reduce to very low heat.
Add the chopped onion,tomato and capcicum.
Stir until onion is soft,and dry it completely.
Put in a serving dish and garnish with green chillis and cucumber slices.
If desired, can sprinkle a little roasted jeera and lime juice on the top.

PS: This dish goes very well as a starter or with rumali rotis.
Before serving, you can also remove the neck and very bony pieces.
Remove the flesh from these pieces and use it later to mix with kuchumber salad or for a sandwich filler or even a chicken chat.

When following a recipe always read it carefully before you start to make it.
Get all ingredients ready and then start cooking.

Mishtu, why don't you give the recipe for Roomali Roti? Many does not know how to make it. Also some mughlai recipes??
